As the elevation increases, the taste profile of the coffee enhances, as the bean has less access to oxygen and is forced to produce energy anaerobically, which causes a decrease in the bitterness and creates the smoothest, most-sought after coffee in the World.

Each cherry is hand-picked and closely inspected by the farmer's trained eye to ensure its form is perfect with no defects. They are then sent for pulping and drying before being rested for eight weeks in cured wolmanized pine silos. Once the drying is completed, the beans are boutique roasted in individual batches. Finally, the growers taste the coffee to ensure the quality is certified 'Jamaican Blue Mountain', and only then is it given to the Coffee Industry Board of Jamaica for the official classification.
